At 61, I don’t enjoy cooking, but these egg bites At 61, I don’t enjoy cooking, but these egg bites are always in my weekly rotation. 12 bites, 80 cal, 6.6g protein, and .4g carbs each. 

Here’s what you need to make them: 
🍳7 eggs (or 5 eggs + 1/2 cup egg whites)
🫕1/2 cup cottage cheese
🧀1/2 cup cheddar cheese
🥬1/2 cup chopped spinach
🥓chopped bacon bits 
🧂salt and pepper to taste

How to make them: 
⏲️Preheat the oven to 350F
🍳Mix eggs, cheese, and cottage cheese in the blender. Pour into a greased muffin tin. Top with chopped spinach and bacon bits. 
👩‍🍳Bake for 20 minutes. Let cool completely and then release from the tin with a butter knife. 

⭐️note: these puff way up in the oven and then deflate as they cool. Don’t panic, that’s just what they do. ⭐️
