- 120g lean ground beef
- 1 cup sweet potatoes, diced and roasted
- 1/2 avocado, diced
- 1/2 cup cottage cheese
- 1 tsp olive oil
- Salt, pepper, garlic powder
- Optional: a pinch of chili flakes
How to Make It
Step 1: Preheat your oven to 200°C (400°F) and dice the sweet potatoes into even ½-inch cubes so every piece roasts at the same rate.
Step 2: Toss them in the olive oil, salt, pepper, and garlic powder until fully coated, then spread them in a single layer with space between each piece so they caramelize instead of steaming.
Step 3: Roast 20–25 minutes, flipping once halfway, until the edges are golden and slightly crispy — deeply colored, not pale.
Step 4: In the last 10 minutes, heat a skillet over medium and add the ground beef with no extra oil — the fat in the beef is enough.
Step 5: Break it into small pieces, let it sit undisturbed about a minute at a time so it browns, season with salt, pepper, garlic powder (and chili flakes if using), and cook until fully browned with no pink left.
Step 6: Build your bowl: beef as the base, roasted sweet potatoes, the cottage cheese spooned to one side, and the diced avocado scattered on top.
