Two rules. Cook the chicken first and remove it so nothing overcooks, then stir-fry the vegetables hot and fast — just 2 to 3 minutes — so they stay tender with a real bite. Soft, soggy vegetables are overcooked vegetables, and the texture contrast is the whole point.

Ingredients
- 150g chicken breast, cut into bite-sized pieces
- 1 cup asparagus, trimmed and cut into pieces
- 1/2 red pepper, sliced
- 1/2 onion, sliced
- 1 tbsp soy sauce
- 1 tsp honey
- 1 tsp sesame oil
- 1 garlic clove, minced
- Sesame seeds, for topping
How to Make It
Step 1: Mix the soy sauce, honey, sesame oil, and minced garlic in a small bowl and set it aside — stir-fry moves fast, so your sauce needs to be ready before you start.
Step 2: Heat a pan or wok over medium-high until very hot, add a little neutral oil, then lay the chicken in a single layer and leave it undisturbed about 2 minutes so it colors before you toss it.
Step 3: Keep cooking and tossing until the chicken is cooked through and golden on several sides, then remove it completely to a plate so it doesn’t overcook while the veggies go.
Step 4: In the same pan, add the onion first for about a minute, then the red pepper and asparagus. Stir-fry on high 2–3 minutes, tossing constantly, until tender-crisp with some color on the edges.
Step 5: Return the chicken to the pan, pour the sauce over everything, and toss on high about 60 seconds so it coats and turns slightly sticky and caramelized — not wet and watery.
Step 6: Take it off the heat right away, plate it, and finish with a sprinkle of sesame seeds.

- In the same pan add your sliced onion first and cook for about a minute, then add the red pepper and asparagus and stir fry everything on high heat for 2 to 3 minutes, tossing constantly, until the vegetables are tender but still have a good bite and some color on the edges
- Add the chicken back into the pan with the vegetables, pour your sauce over everything, and toss on high heat for about 60 seconds so the sauce coats every piece and becomes slightly sticky and caramelized rather than just wet and liquid
- Take it off the heat immediately, plate it up, and finish with a sprinkle of sesame seeds on top
