Three generations 61, 40 and 9 staying strong.— and it started with me 💪🏼

I didn’t set out to make strength a family thing. It happened the way the important stuff does — my kids grew up watching me train, and now my nine-year-old grandson is watching too. 

To him, a grandmother who lifts and moves and keeps pace isn’t unusual. It’s just what we do.

That’s the real reason I keep showing up on the days I’d rather not. 

Not for a photo — so I can stay IN it with them, in the gym, on the trail, for the next 30 years 💛

The best example I’ll ever set isn’t something I say. It’s something they get to watch me do.

At 61, I don’t enjoy cooking, but these egg bites At 61, I don’t enjoy cooking, but these egg bites are always in my weekly rotation. 12 bites, 80 cal, 6.6g protein, and .4g carbs each. 

Here’s what you need to make them: 
🍳7 eggs (or 5 eggs + 1/2 cup egg whites)
🫕1/2 cup cottage cheese
🧀1/2 cup cheddar cheese
🥬1/2 cup chopped spinach
🥓chopped bacon bits 
🧂salt and pepper to taste

How to make them: 
⏲️Preheat the oven to 350F
🍳Mix eggs, cheese, and cottage cheese in the blender. Pour into a greased muffin tin. Top with chopped spinach and bacon bits. 
👩‍🍳Bake for 20 minutes. Let cool completely and then release from the tin with a butter knife. 

⭐️note: these puff way up in the oven and then deflate as they cool. Don’t panic, that’s just what they do. ⭐️

Eat two for breakfast. One as a quick snack. Hit your protein without even thinking about it. Save this so it’s here when you need it.
