Ingredients
  

  • 2 eggs
  • 3 egg whites
  • 1/2 cup spinach chopped
  • 1/4 cup bell pepper diced
  • 1/4 cup onion diced
  • 2 tbsp feta or shredded cheese
  • 1 tsp olive oil
  • Salt and pepper to taste

Method
 

  1. Heat the olive oil in a nonstick skillet over medium heat.
  2. Add the onion and bell pepper and cook 2-3 minutes, until softened.
  3. Add the spinach and cook about 30 seconds, just until wilted.
  4. Whisk the whole eggs and egg whites with salt and pepper, then pour into the pan.
  5. Gently fold and stir until just set but still soft.
  6. Fold in the feta, plate, and serve right away.
