High-Protein Turkey Taco Bowl

Ingredients
  

  • 4 oz lean ground turkey 93% lean
  • 1/2 tsp taco seasoning
  • 1/2 cup cooked brown rice
  • 1/4 cup black beans drained and rinsed
  • 1/4 cup corn
  • 1/4 cup diced tomato
  • 2 tbsp shredded cheese
  • 2 tbsp Greek yogurt
  • Optional: salsa cilantro, and a squeeze of lime

Method
 

  1. Brown the ground turkey in a skillet over medium heat, breaking it up, until no pink remains.
  2. Stir in the taco seasoning and a small splash of water, then simmer 1-2 minutes.
  3. Build the bowl: rice as the base, then the turkey, black beans, corn, and diced tomato.
  4. Top with the shredded cheese and a dollop of Greek yogurt in place of sour cream.
  5. Finish with salsa, cilantro, and a squeeze of lime if you like.
